Gino’s manager, Hatem Toumi, spoke to Ripe about how his resaurant is so successful and why people should visit.
Gino’s is in its fouteenth year of business now, and it’s still going strong. I believe people like the way we work because we make customers our priority. Of course it helps that our food is superb and the service is first grade!
In 2009, Vito Cataffo, former owner of Gino’s, took part in a channel 4 documentary. The six-part programme featured Mr Cataffo heading to Bologna to open a restaurant serving British food, with an Italian twist.
In our restaurant we serve Itialian food with a British twist, Vito wanted to do the opposite of this on his trip. He swore by only using british produce, including beef from here in Lincolnshire and cheeses from Cornwall. He even took the famous Lincolnshire sausage to Italy!!

I think people who watched the documentary wanted to visit the restaurant to meet Vito. The publicity definitely helped to put Gino’s on the map, but we have to work extremely hard to keep it there.
Customers like to come back to us because they do know exactly what to expect when they get here and there is no surprises or changes. They know they will always be treated with respect and can enjoy beautiful food.
How often do you make changes to your menu?
Very, very rarely. We like to keep it the same because all of our costumers know our menu so well, and they like it so we try to keep them happy. To keep up with trends we obviously have to make changes every now and then, otherwise we run the risk of being old-fashioned and people could easily become bored.
But we are popular because people love our food- so why change it!
How do you fight off competition in the area?
By keeping high standards on all areas of the business. For example it’s not all just about the food, we have to consider service, surroundings and atmosphere. We try our best to cater to all customers’ needs because they are the most important thing.
If people haven’t already visited the restaurant…why should they?
Because Gino’s offers a memorable experience and we can guarantee that when you have visited once…you will be back for more!
There are lots of restaurants available in and around Lincoln town, but people may not have thought about coming to Bailgate. Located near the famous Cathedral, the sheer ambience of Bailgate makes for an immediately pleasant visit.

What are the most popular dishes?
Gino’s Pizza is a favourite for many people. It has a bit of everything and is unique to us.Pasta as well is a huge hit with our customers. Most people order fusilli alla genovese which has a lovely sauce.
