 What you need:

Tasty spring chicken

Spring parmesan chicken:

 

 

 

1 egg white

 5 tbsp finely grated Parmesan

 4 boneless, skinless chicken breasts

 400g new potatoes , cut into small cubes

 140g frozen peas

 good handful of baby spinach leaves

 1 tbsp white wine vinegar

 2 tsp olive oil

Method:

Heat grill to medium and line the grill pan with foil. Beat the egg white on a plate with a little salt and pepper. Tip the Parmesan onto another plate. Dip the chicken first in egg white, then the cheese. Grill the coated chicken for 10-12 mins, turning once until browned and crisp.

Meanwhile, boil the potatoes for 10 mins, adding the peas for the final 3 mins, then drain. Toss the vegetables with the spinach leaves, vinegar, oil and seasoning to taste. Divide between four warm plates, then serve with the chicken.

 

Spring chicken in a pot:

What you need:

1 tbsp olive oil

1 onion , chopped

500g boneless, skinless chicken thighs

300g small new potatoes

 

425ml low-salt vegetable stock (such as Kallo low-salt vegetable stock cubes)

 

350g broccoli , cut into small florets

 

350g spring greens , shredded

140g petits pois

bunch spring onion , sliced

2 tbsp pesto

Method:

Heat the oil in a large, heavy pan. Add the onion, gently fry for 5 mins until softened, add the chicken, then fry until lightly coloured. Add the potatoes, stock and plenty of freshly ground black pepper, then bring to the boil. Cover, then simmer for 30 mins until the potatoes are tender and the chicken is cooked. Can be frozen at this point.

Add the broccoli, spring greens, petit pois and spring onions, stir well, then return to the boil. Cover, then cook for 5 mins more, stir in the pesto and heat through.

Gino’s manager, Hatem Toumi, spoke to Ripe about how  his resaurant is so successful and why people should visit.

Gino’s is in its fouteenth year of business now, and it’s still going strong. I believe people like the way we work because we make customers our priority. Of course it helps that our food is superb and the service is first grade!

In 2009, Vito Cataffo, former owner of Gino’s, took part in a channel 4 documentary. The six-part programme featured Mr Cataffo heading to Bologna to open a restaurant serving British food, with an Italian twist.

In our restaurant we serve Itialian food with a British twist, Vito wanted to do the opposite of this on his trip. He swore by only using british produce, including beef from here in Lincolnshire and cheeses from Cornwall. He even took the famous Lincolnshire sausage to Italy!!

We are popular because people love our food!

I think people who watched the documentary wanted to visit the restaurant to meet Vito. The publicity definitely helped to put Gino’s on the map, but we have to work extremely hard to keep it there.

Customers like to come back to us because they do know exactly what to expect when they get here and there is no surprises or changes. They know they will always be treated with respect and can enjoy beautiful food.

How often do you make changes to your menu?

Very, very rarely. We like to keep it the same because all of our costumers know our menu so well, and they like it so we try to keep them happy. To keep up with trends we obviously have to make changes every now and then, otherwise we run the risk of being old-fashioned and people could easily become bored.

But we are popular because people love our food- so why change it!

How do you fight off competition in the area?

By keeping high standards on all areas of the business. For example it’s not all just about the food, we have to consider service, surroundings and atmosphere. We try our best to cater to all customers’ needs because they are the most important thing.

If people haven’t already visited the restaurant…why should they?

Because Gino’s offers a memorable experience and we can guarantee that when you have visited once…you will be back for more!

There are lots of restaurants available in and around Lincoln town, but people may not have thought about coming to Bailgate. Located near the famous Cathedral, the sheer ambience of Bailgate makes for an immediately pleasant visit.

There are dozens of pubs and restaurants scattered around the area, and Gino’s is most certainly one of the most popular.

So what can people expect when they come to Gino’s?

Good, tasty food which is both cooked and served with care. Top notch service as well as smartly dressed waiters and waitresses.

What are the most popular dishes?

Gino’s Pizza is a favourite for many people. It has a bit of everything and is unique to us.Pasta as well is a huge hit with our customers. Most people order fusilli alla genovese which has a lovely sauce.

Not your average shake

Some are thin and some are thick, Robert Payton the owner of the  ‘Eskimoo’ milkshake bars in Lincoln spoke to our reporter at Ripe magazine, Tash Keech, about why you wont get a normal shake..

T.K Please can you tell me about the milkshakes Eskimoo sells
R.P – Basically the idea is to choose your favorite type of chocolate, sweets, fruit or cereal and then we blend it all together with milk and ice-cream. You can then add whipped cream, sprinkles, sauce or nuts and there you have an ‘Eskimoo shake’!

T.K So, how long has the original Eskimoo store, on Guildhall Street in Lincoln, been open?
R.P It opened in October 2008, so it has been open for just over two years now. The new store opened on 17th March.

T.K Has the new store, on St. Marks Street, been a success so far?
R.P Yes, very much so! It’s all about generating new customers down this end of Lincoln and not splitting our present customers between the two shops, they are quite a distance apart! The location is great because it often gets busy at the road crossing opposite. It is really close to the University and not too far away from the football stadium, so hopefully it will get lots of passing trade. Also because the store opened on Red nose day we have given a portion of the sales to Comic Relief.

T.K Is the new store any different from the one on Guildhall Street?
R.P The design is replicated but there are differences too. For example the colour schemes are replicated and both stores have the menu printed on the window however, the new shop has seating so customers can drink their milkshakes inside. There is also a ‘serve through window’ so customers don’t have to queue for their shakes inside, this will be great during the summer.

T.K Who came up with this idea to make chocolate bars and packets of sweets into a milkshake?
R.P The concept itself is not ours but the ‘Eskimoo’ name, branding and design is entirely ours. A cartoonist in the US designed the logo from a specific brief of ours.

T.K How many different flavors or varieties of milkshakes do you sell?
R.P Approximately 120! But combination wise, (we allow up to three ingredients in each) and taking the nine toppings into account, millions! You can have anything in it from Galaxy caramel and Apple Pie or Crunchie and Toffee Crisp ! Whatever takes your fancy!

T.K Which is the most popular ingredient?
R.P The top two are Daim and Oreo. Oreo probably has the edge. The top 10 are pretty much always the same 15 (if this makes sense) and jostle for position each week.

T.K Roughly how much do you sell the shakes for?
R.P This all depends on what sort of shake you have but roughly £2.85. The Eskimoo specials are all slightly more expensive at £3.60. This is because they have more sweets or chocolate in them!

T.K Why are the ‘specials’ so special?
R.P These are milkshakes that staff in the Guildhall store thought up. Sales of these will be tracked and then which ever one is most successful and has the most sales will win a prize. Some of these milkshakes include ‘Head Zinger’ which has refreshers and lemon sherbet with popping candy on the top, ‘Moovie Fodder’ Toffee popcorn with chocolate M & M’s in and also the ‘Velvet Munky’ a galazy bar with a banana thrown in. There is something for everyones taste buds.

T.K Have you got any plans to open any more stores?
R.P Yes but in the right locations and slowly and surely, growing organically.
